*Note: I was going to post this on Sunday but my computer decided to go on the fritz, so I couldn't upload until today. Sorry the recipe is a bit late. :)Whenever I make flautas it's to re-use some leftover shredded meat. I've made it with leftover shredded chicken, pork and beef from various recipes. This go-round I made it from leftover Salsa Verde Carnitas. Of course you could also make the carnitas for the purpose of making flautas. I changed up the recipe a little bit to suit my own taste - and the flautas part is really easy.I made a couple filled with queso fresco (as you will see in the pictures) for my daughter because the carnitas were too spicy for her.Flautas(filled with carnitas and cheese)makes a lot*recipe for the carnitas adapted from here- 2-3 lbs pork shoulder- 2 cups salsa verde (that's the kind we always use)- 1 onion, chopped- 3-4 cloves garlic, crushed- 3 cups chicken stock (or whatever kind you have on hand)- 2 tsp cumin seeds- 1 tsp fennel seeds- 2 tsp ground coriander- 1 tsp dried oregano- queso fresco- corn tortillas- frying oil- toothpicks- toppings (crumbled queso fresco, crema and cilantro)Salsa Verde CarnitasTrim the excess fat from the pork shoulder roast. Put the roast, salsa verde, onion, garlic, stock, cumin seeds, fennel seeds, coriander, and oregano in a large, thick-bottomed pot over high heat.Bring to a boil and then reduce to a simmer.Cover and simmer for about 2 1/2 hours, or until meat pulls away easily with a fork.Preheat oven to 400 degrees.Remove meat from liquid in pot and put meat into a roasting pan lined with aluminum foil. With 2 forks, tear the meat into large shreds. Spread out in an even layer.Roast for 15-20 minutes until the shreds are brown and crispy.While the meat is roasting, reduce the liquid remaining in the pot to about half.Return the browned meat to the pot with the liquid. Season with salt.FlautasPour about 3/4 of an inch of oil into your pan (I use my cast iron pan here) and heat to about 300 degrees. If you don't have a candy thermometer, test the oil by sticking in the handle of a wooden spoon, and if bubbles appear around the spoon the oil is hot enough.While the oil is heating, start assembling the the flautas. (If the tortillas are too stiff, microwave them in a stack for about 30 seconds to make them more pliable.) Lay out one tortilla and fill it down the middle with a couple tablespoons worth of carnitas and fold the sides of the tortilla over and secure with a toothpick. Continue assembling flautas until you are out of tortillas or carnitas (I made one package of corn tortillas worth, makes about 15 flautas, with plenty of leftover carnitas for later.)Place the filled tortillas in the hot oil and fry on each side for about a minute or until they are crispy and golden. Place the fried flautas on a paper towel lined plate as they finish.Don't forget to remove the toothpicks before you serve them!Top with crema, crumbled queso fresco, and chopped cilantro.Serve immediately.

No that is not a typo in the title. One of my favorite places to find new recipes is The Kitchn, it is a part of the website Apartment Therapy - which I also love. Apartment Therapy has information for renters and homeowners on how to decorate or renovate your home along with anything else that has to do with renting or owning a home. Great resource. The Kitchn is similar, recipes, reviews on kitchenware, reader questions, etc. So here are a couple recipes that I got from The Kitchn and tried out.Spicy Glass Noodles with Crispy Pork (Yum Woon Sen) Both recipes are delicious! Try them out!
Grown-up Tuna Casserole The only thing I changed about the Tuna Casserole is that I left out the mushrooms. No reason to go to Olive Garden anymore. The only reason we went there was for my fiance's favorite dish, Zuppa Toscano. And I found a copycat recipe for it, along with the breadsticks. I tried the recipes and sure enough, tasted exactly the same.

I made coconut flan the other day, and although it was delicious, I will admit that it came from a box... Sometimes you don't have the time to make a homemade dessert, plus it was on sale. I did amp up the coconut flavor by using half coconut milk and half whole milk instead of all regular milk. And I topped it with coconut shreds and sliced almonds. My new favorite flavor combination is coconut and almond. Next time I'll make it from scratch.
I tried out a recipe for Carrot Cake pancakes from Smitten Kitchen, one of my favorite food blogs. My cousin actually bought me her new cookbook as an early Christmas present, and I'm super excited. I've already tried a recipe from it which I will post pictures of later. This recipe is just from her blog, and although the pancakes are quite small, they are delicious and not too sweet - so they can be a breakfast and not a dessert. :]

Tomato and Goat Cheese Tart

I've been on this goat cheese fix for the past couple months. I hadn't ever had goat cheese until I went out to dinner with my mom, cousin and her boyfriend. We went to a tapas restaurant and one of the dishes we ordered was this delicious goat cheese and eggplant tapas. So good. So ever since then I've been trying all these different recipes that use goat cheese because I just think it's so magically delicious.I made this tart for dinner a couple nights ago and it is so delicious. I'm looking forward to making it again really soon.Tomato and Goat Cheese TartRecipe adapted from Barefoot Contessa- one sheet puff pastry, defrosted- olive oil- one thinly sliced onion- two garlic cloves, thinly sliced- salt and pepper- red wine- two teaspoons minced fresh thyme- grated Romano cheese- goat cheese- eight grape tomatoes- dried or fresh basilUnfold the sheet of puff pastry on a lightly floured surface and roll lightly. Cut in half to make two rectangles, and refrigerate until ready to use.Preheat oven to 425 degrees.Heat a couple tablespoons of olive oil in a skillet over medium-high heat, add the onions, garlic, and salt and pepper to taste. Saute for 15 - 20 minutes or until the onions are limp and almost no moisture remains in the skillet.Add the thyme and a splash of the wine. Continue to cook for another ten minutes, until the onions are lightly browned. Remove from the heat.Take the puff pastry out of the fridge and score around the edges of each rectangle a border that is a 1/4 inch from the edge. Prick inside the border with the tines of a fork. And sprinkle about a tablespoon of the Romano cheese on each sheet, staying inside the border lines.Place half of the onion mixture on each half, staying within the scored edge. Crumble goat cheese on top of the onions. Place slices of the tomato on top of the goat cheese and top the tomatoes with salt, pepper, a sprinkling of the dried or fresh basil, and a drizzle of olive oil. Top with a sprinkling of some more Romano cheese.Bake for 20 - 25 minutes or until the pastry is puffed and golden brown.
